The experience of bread involves all senses: the taste, the texture, the aroma, the sound and the appearance. To each and every human being the experience of bread is different. Some people like it soft and sweet or brown and wholegrain, while others prefer a hard crust and a chewy crumb. The experiences from bread never end.
Together with scientist from the University of Copenhagen, Lantmännen Unibake is creating new insights into the mysterious world of sensory perceptions of bread. We are exploring questions like difference in taste, aroma and texture according to grain and flour type, fermentation processes, ingredients, etc.
This research will provide valuable knowledge to our customers and make the innovation processes at Lantmännen Unibake even more efficient.
