Place the frozen doughnuts on the plate and let them thaw overnight in fridge or 1-2 hours in room temperature. Instructions for proving: +33-36 °C, relative humidity 70-75 %, 1-1½ hours. Let doughnuts dry about 15 minutes before deep-frying. Instructions for deep-frying: the temperature of the oil is +180 °C. Crystallize the doughnuts after deep-frying.
