Umami Burger in Pretzel Bun

Slice the Tomatoes.

Line a sheet pan with baking paper.

Add 3 crushed garlic cloves.

Add thyme leaves and drizzle with oil and dehydrate for 10 minutes.

Make the parmesan crisps by finely grating the cheese onto a silpat or greaseproof paper to the size you require and place in a hot oven till just browning around the edges, carefully remove and used as a decoration to the burger.
