Sliders with flash-fried steaks, and chipotle relish


Serves 10 people

10p. Sliders brioche buns
900g. grounded beef
75g. lettuce
Sliced mozzarella
2 Sliced red onions

Bacon/jalapeño mayo:

1 egg yolks
½ teaspoon good mustard
½ teaspoon apple cider vinegar
1dl olive oil
100g. cooked and crushed bacon
30g. finely chopped jalapeño
Salt and pepper

Chipotle relish:

250g. tomatoes, skinned and chopped
2 gherkins, diced in cubes
2 tablespoon raspberry vinegar
20g brown sugar
2 tablespoon freshly chopped basil
2 whole smoked and dried chilies
Salt and pepper

Bacon/jalapeño mayo:

  1. Mix egg yolks, mustard and vinegar, gradually add olive oil and whisk until the oil is fully obtained in the mixture.
  2. Add crushed bacon and chopped jalapeño and flavor with salt and pepper.

Chipotle relish:

  1. Mix all the ingredients in a pot, let it boil up and then let it simmer in approx. 30 minutes.
  2. Pick out the whole chilies from the relish before serving.


  1. Shape 10 hamburger patties from the grounded beef, flavor with salt and pepper and cook the patties on a grill over the flames.
  2. Warm the buns in an oven following the instructions, or toast them in a toaster.
  3. Spread the buns with bacon/jalapeño mayo and fill with lettuce, chipotle relish, hamburger patties, mozzarella and red onion.

Serve with: Mashed potatoes, fries, chili-fries, root vegetable-fries, tortillas chips, onion rings, a garden salad or a delicious salsa.
