True Rustic hotdog with oven-baked tomatoes
Ingredients
Serves 10 people
- 10 Royal Durum Buns
- 10 good spiced sausages
Oven-baked tomatoes:
- 8 tomatoes cut in halves
- Oil
- 1 teaspoon thyme
- 1 tablespoon fresh basil, chopped
- Salt and pepper
Yellow, coarse ketchup:
- 6 yellow tomatoes, coarsely chopped
- 50g. capers, finely chopped
- 2 cloves garlic, coarsely chopped
- 1dl apple vinegar
- 50g. onion, finely chopped
- 2 tablespoon honey
- 20g. rosemary, chopped
- Salt and pepper
Crispy onion rings:
- 1 large onion (or red onion)
- 1 pinch of salt

For this gourmet hotdog we included home-made yellow, coarse ketchup, crispy onion rings and sweet mustard.
The intense flavour of the tomatoes and spicy sausage topped with crispy onion rings is the perfect match for our Royal Durum bun.
Oven-baked tomatoes:
- Flip the tomatoes in a bowl with the remaining ingredients.
- Place them on a baking sheet and bake them by 105 degrees C for minimum 3 hours.
- Let the tomatoes cool down and put them in a sealed container with oil covering all the tomatoes.
Yellow, coarse ketchup:
- Roast garlic, onions and rosemary in a frying pan under high temperatures.
- Add the chopped tomatoes and stir around.
- Add vinegar and honey and let it simmer for 5 minutes.
- Flavor the ketchup with salt and pepper and let it cool down before serving.
Crispy onion rings:
- Peel the onion.
- Use a mandolin iron to cut it into very thin slices and place them on a baking sheet.
- Sprinkle them with salt and bake the onion rings in a preheated oven by 140 degrees for approx. 30 minutes, until they are crispy.
- Let the onion rings cool off completely before use.
