Three Ultimative Sidedishes for Burger
Ingredients
Glazed panchetta with mint
- 1 kg of pancetta cut into rods
- 50 g minced mint
- 1 tbsp. sugar
- ½ dl water
Tater tots - Crispy breaded mashed potatoes
- 500 g boiled potatoes
- 1 cup of whole milk
- 50 g of soft butter
- 1 tbsp. salt
- 1 tsp. white pepper
Breading:
- 2 pcs. egg
- ½ dl milk
- 200 g panko grater
Crispy sweet potato fries
- 1.5 kg peeled sweet potatos cut into sticks or curly
- 50 g of salt
- 1 l of water
Instructions
Glazed panchetta with mint
- Roast the pancetta until it starts to turn golden.
- Add the sugar and stir well until the sugar begins to caramelize.
- Add water and bring to a boil until it is all golden, and then put the minced mint in.
- Serve with some BBQ vinegar.
Crispy breaded mashed potatoes / Tater tots
- Whisk potatoes, milk, butter, salt and pepper together in a uniform mass. There may be smaller lumps in it.
- Refrigerate for 30 min, and then roll it into small round cherry-sized balls.
- Heat the fryer and whisk the milk and the eggs together. First turn them into the mixture and then grate.
- Fry them until golden, place them on grease paper and sprinkle with a little salt.
- Serve them as they are or with grated cheese or bacon.
Crispy sweet potato fries
- Mix water, salt and potatoes together, and then leave to stand in room temperature for 2 hours.
- Pour the water and rinse them clean of salt.
- Dip them dry and fry for approx. 2-3 minutes, put them on degreasing paper and sprinkle with salt.
