Tokyo Trap
Ingredients
Serves 10 people
- 10 potato buns
- 10 fish fillet (200g prefer white meat fish)
- 1 bag tempura powder
- 1 bag sesame seeds
- lemon juice
- mixed lettuce
- cucumber slices
Miso flavored Hollandaise sauce:
- 2 egg yolks
- 1 teaspoon good quality mustard
- 2 teaspoons apple cider vinegar
- 1 teaspoon lemon juice
- 150 ml melted clarified butter
- 1 tablespoon miso paste
- Salt and pepper
Instructions
- Hollandaise sauce: Mix together egg yolks, mustard, vinegar and miso, gradually add butter and whisk until the butter is fully absorbed in the mixture. Flavour with salt and pepper.
- Fish fillet: Coat fish into tempura mixture, deep fry until golden brown and season with salt and pan-fried sesame seeds.
- Burger: Toast the buns. Spread the buns with the Holladaise, add mixed lettuce, cucumber slices, the fish and sprinkle a little lemon juice on top
