2 x Large Portobello Mushrooms
Americana Grill Marked Burger Bun - toasted
2 Tbsp of Vegan Kimchi - recommend Yutaka Korean Kimchi
2 Tbsp Sweet Soy Sauce
1 Tbsp Sesame Oil
1 clove – crushed garlic
I always like to have a vegan or vegetarian burger in my arsenal. And funnily enough, it’s those burgers that my meat-eating friends prefer. They are so used to the classic burgers, that they appreciate the new exciting flavours that can be achieved when going veggie. This burger is ‘umami-tastic.’ It’s covered in layers of savoury, tangy, moreish goodness and is super quick to make and serve. Alright, enough of me enthusing about this masterpiece of meat free awesomeness, let’s get to it….
Combine the soy, sesame oil, garlic and sesame seeds for your glaze – that is a flavour bomb!
Take your mushrooms and peel the skin off. This will stop it becoming stringy on the heat. Get your grill, pan or skillet to a medium heat and place the mushrooms gill side up cooking for a few minutes. Add a couple of teaspoons of glaze to the gill side and spread evenly across that side of the mushroom, cook for another minute or two. Flip the mushrooms and glaze the top side. Cook for a few more minutes and when the mushroom starts getting juicy it’s time to build.
To keep this recipe completely vegan, I had to choose the right bun. I’ve used the Americana Grill Marked Bun, which is approved by the Vegan Society. Not only does it taste great, but the firm texture is perfect with the meaty mushrooms, and the marks on top provide a just-grilled finish.
This recipe contains a lot of liquid, so choosing a good quality bun that can handle it and toasting them will stop it getting soggy and ensure the bun doesn’t fall apart.
Place the first mushroom on your toasted bun base, top with a generous spoon of kimchi, top that with the other mushroom then finish with the bun! Now, bathe in the glory of your wonderful bundle of joyful deliciousness.
