CHEDDAR BEER BUTTER

  • 1  pound butter, softened
  • 3 - 4 cups cheddar cheese, shredded
  • 1 tablespoon stone ground mustard
  • 1/4 cup dark beer
  • Salt and cracked black pepper

Combine above ingredients in a bowl. The cheese beer butter goes perfectly together with slices of warmed pretzel breads.

APPLE CHUTNEY

  • 1  pound dried cranberries
  • 3 chopped onions
  • 1 ½ tablespoon currant vinegar
  • 1 1/5 tablespoon salt
  • 7 slices fresh ginger
  • 3 pound cooked apples, diced
  • 1  pound brown sugar
  • ½ cup. water

Cook all ingredients until tender in a pan for about 45 minutes. Let the chutney cool before serving.

KALE PESTO

  • ½ pound kale
  • 2 cups grated cheese
  • 1 cup hazelnuts
  • 1 tablespoon salt
  • ½ cup olive oil
  • 1 bunch of fresh wild garlic

Combine ingredients in a bowl and mix until you get a uniform texture. Refrigerate for at least an hour before serving. 

OLIVE TAPENADE

  • 1 cup black olives
  • ½ cup green olives 
  • 4 cloves garlic
  • ½ tablespoon sea salt
  • 1 tablespoon lemon juice
  • 1 tablespoon dried oregano
  • 1/2 cup olive oil

Combine ingredients in a bowl and mix until you get a uniform texture.
