Umami Burger in Pretzel Bun
Ingredients
Serves 10 people
- 10 Pretzel Buns
- 1,5 kg Ground beef
- 200g Umami paste
- 200g Tomato ketchup
- 100g Yellow mustard
- 10 Sliced beef steak tomato
- Garlic
- Thyme
- Worcester Sauce
- Oil
- 200g Pickled gherkin in slices
- 200g American cheese slices
- 200g Parmasan cheese crisps
- 200g Baby gem lettuce

Slice the tomatoes and garlic.
- Line a rosting pan with greaseproof paper.
- Put thyme leaves and oil on the paper and dehydrate for 10 minutes in the oven (120 degrees).
- Mix umami paste, mustard and ketchup and use as spread.
- Make the parmesan crisps by finely grating the cheese onto greaseproof paper to the size you require and place in a hot oven till just browning around the edges, carefully remove and used as a decoration to the burger.
