Chicken Baguette with Broccoli & Apricot Salsa
- Euro-Bake Rustic Sandwich Baguette 8" (80875) or Tuscany Sandwich Roll (801)
- Slices of chicken breast
Spread (10 servings):
- 10 slices of bacon
- 6 oz cream cheese
- 4 oz sun-dried tomatoes
- Juice from 2 limes
- ½ tbsp cayenne pepper
Salsa (10 servings):
- 7 oz broccoli florets (cooked)
- 3 oz dried apricots
- 2 tbsp finely chopped mint
- 1 tbsp finely chopped chili
- 9 oz lettuce leaves
Cook the chicken and cut into thin slices.
Mix all the ingredients for the spread in a food processor and spread on the bottom half of the baguette. Add a generous layer of salad and top with chicken.
Mix all ingredients for the broccoli salsa in a food processor and spread on top of the chicken.
