Mascarpone Cream Raspberry Croissant

Get inspired and add your own unique touch to the Curved Croissant from Schulstad Bakery Solutions.

Ingredients

Serve 10 people: 

  • 10 Curved All Butter Croissants, baked
  • 200ml créme fraice 
  • 100ml  mascarpone cheese 
  • ½ vanilla bean, split lengthwise 
  • 100ml  whipped cream
  • 50g powdered sugar 
  • Fresh raspberries 
  • White chocolate for decoration
  1. Scrape the seeds from the vanilla bean with a sharp knife
  2. In a medium bowl, mix créme fraiche, mascarpone cheese and vanilla seeds 
  3. Add whipped cream 
  4. Add powdered sugar and mix gently 
  5. Refrigerate until you are ready to assemble the croissants 
  6. Slice the cooled croissants and fill with the mascarpone cream
  7. Decorate with fresh raspberries and white chocolate
