Mascarpone Cream Raspberry Croissant

  1. Scrape the seeds from the vanilla bean with a sharp knife
  2. In a medium bowl, mix créme fraiche, mascarpone cheese and vanilla seeds 
  3. Add whipped cream 
  4. Add powdered sugar and mix gently 
  5. Refrigerate until you are ready to assemble the croissants 
  6. Slice the cooled croissants and fill with the mascarpone cream
  7. Decorate with fresh raspberries and white chocolate
