Battle Rules of Engagement

  1. Your gourmet burger menu creation should retail at €10. Ingredients should cost no more than €2.50 per serving.

  2. Knives and forks are banned in the kitchen. Your gourmet burger should be able to be eaten with the hands or feet.

  3. You should use only ingredients and techniques that are standard to a commercial kitchen. If you have a special home-made condiment or ingredient, you need to submit the recipe for this. This is “open” innovation.

  4. Your gourmet burger must contain a bread and a protein element. Vegetarians are not welcome to the battle, Pescetarians are just about tolerated.

Judging Criteria

Your creation will be judged upon the following criteria. The judges decisions are final, so don’t push it.

  1. Overall presentation – Visual impact, Structure, Proportions
  2. Toppings – Flavour, Distinctiveness, Chemistry
  3. Protein element – Flavour, Seasoning, Texture, Mouthfeel
  4. Bun presentation – Flavour match, Density, Toasting
  5. Adherence to “Burger Architecture” – a combination of all elements to create the perfect gourmet burger.

Do’s and Don’ts for the Battle


  1. Have a concept for each recipe. You should have prepared your weapons before commencing battle. What buns, what cheese, what condiments and what salad?
  2. Consider the Architecture of the burger. How you build it will affect the eating enjoyment. You will be judged on this.
  3. Consider the eating experience. No-one likes a chewy burger. If you are working with a dense bun, eliminate all other aspects of denture demands.
  4. Experiment with flavours and textures. Fortune favours the brave.


  1. Show up unprepared. This is warfare, and the unprepared go home in body bags.
  2. Overcook your burgers. A cow died for that patty. Respect the fallen.
  3. Try and make your burger “healthy”. It’s supposed to be indulgent.
  4. Build a burger you can’t fit in your mouth or eat with your hands.

Our two-day workshop will take place at Leiths School of Food and Wine, at their 69 St Marks Road location near the very trendy Portobello Road in central London. Nearest tube: Ladbroke Grove.

The Battle Briefing (Kick Off)

The Burger Battle Briefing will take place on Wednesday 5th at 1900 at one of London’s newest pop-up burger joints – BurgerShack – in the Royal Oak Pub 74-76 York Street, Marleybone, W1H 1DP. The location is a short 20 minute walk from the hotel (or 5 minutes in a taxi).

Gavin Lucas – aka @Burgerac – will be serving some amazing burgers and talking about the London gourmet burger scene. He will be open to questions and we will get a tour of the kitchen and the principles behind his menu.


Arriving in London

We suggest that you fly into Heathrow airport, and use the Heathrow Express train to reach central London (20 minutes) into Paddington Station. The hotel is located 10 minutes walk from the station.

Transport in London

We will be using public transport (underground trains and buses) wherever possible. We suggest that you purchase a 3 day Travel Pass for Zones 1 and 2 when you arrive in London. You cannot pay with cash on buses. https://www.tfl.gov.uk/

Taxi’s do not (as a general rule) take payment with credit or debit cards. Please ensure you have cash in small notes when using a taxi.

The Barracks (Hotel)

We are staying at the four star Corus Hotel Hyde Park, 1 Lancaster Gate, W2 3LG. The hotel is a 10 minute walk from Paddington station (main line trains to Heathrow, and underground services).

Rooms are booked in your name – and you will need to pay for your own stay on check-out.

Important Tips

  • UK still has the Pound Sterling as its currency, and Euros are not accepted as payment in most places.
  • Many London taxi’s DON’T take Visa or Mastercard payment cards. Please ensure you have enough CASH on you during the visit.
  • The UK runs a different power plug to the rest of Europe. Make sure you have an adaptor if you will need to charge your electronic devices.
